Our celebration of autumn centers on a hearty bowl of delicious chili. We showed you how to set up an inviting get-together here, now for the all-important element: the food!

Try our chili recipe for a crowd. Here’s what you’ll need.

Chili Recipe

  • Olive oil
  • 3-4 pounds of ground beef
  • Chili powder (we use lots)
  • Salt and pepper
  • 1 large onion, diced
  • 2 tsp minced garlic
  • 48-oz container of vegetable juice
  • 48-oz container of tomato juice
  • 2 cans of dark red kidney beans, drained
  • 6-7 whole bay leaves
  • 1-2 tsp Louisiana hot sauce
  • Tub of Fiesta Garden Fresh Salsa (we prefer hot over mild)

Grab a big pot and cook it all in one.  Coat the bottom of the pot with olive oil and add the diced onion and garlic. Let the onions caramelize and stir from time to time.

Add the ground beef, a little salt and pepper, and some chili powder—at least a tablespoon. Mix it all together and heat until beef is cooked through, stirring from time to time. Drain the grease and put the pot of meat back on the burner.

Add the juices and the rest of the ingredients. Toss in more chili powder. Bring to a boil and reduce to a bubbling simmer. Cook uncovered for at least 30 minutes to let the liquids reduce. When done, remove the bay leaves.

 

Make sure there’s a big bowl of shredded cheese to top off your servings.

 

Add some sliced green onions.

 

And don’t forget the crackers.
